- Heat the oven to 375°F (190°C). Line baking sheets with parchment, or use ungreased baking sheets.
- Whisk together the flour, baking soda, salt, and cinnamon in a medium bowl.
- In a separate large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
- Beat in the eggs one at a time, then mix in the vanilla extract.
- Gradually mix the flour mixture into the butter mixture until combined.
- Stir in the oats and butterscotch baking morsels until they are evenly distributed through the dough.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between cookies.
- Bake for 7 to 8 minutes for softer, chewier cookies or 9 to 10 minutes for crisper edges. The centers should still look slightly soft when the cookies come out of the oven.
- Let the cookies cool on the baking sheet for about 2 minutes, then transfer them to a wire rack to finish cooling.
Notes
Use softened butter rather than melted butter to help prevent excessive spreading. Old-fashioned oats provide a more substantial texture, while quick-cooking oats create a softer, more uniform cookie. Do not overbake; the centers should remain slightly soft when removed from the oven.
