Ingredients

Pumpkin Bread
  • 1 3/4 cups (220 g) All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg
  • 1/4 teaspoon Ground cloves
  • 2 Large eggs
  • 1 cup (200 g) Granulated sugar
  • 1 cup (about 225 g) Canned pumpkin purée
  • 1/2 cup (120 ml) Canola or other neutral vegetable oil
  • 1/4 cup (60 ml) Water
Swirl
  • 1/2 cup (about 150 g) Nutella or another chocolate-hazelnut spread

Method

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan and, if desired, line it with parchment so the finished loaf is easy to lift out.
  2. Whisk the flour, baking soda, salt, cinnamon, nutmeg, and cloves together in a medium bowl until the spices are evenly distributed.
  3. In a separate large bowl, whisk the eggs and sugar. Add the pumpkin purée, oil, and water, then mix until smooth.
  4. Add the dry ingredients to the pumpkin mixture and stir just until no visible streaks of flour remain. Do not overmix.
  5. Spread about half of the pumpkin batter into the prepared loaf pan. Spoon or gently spread the Nutella over the batter.
  6. Add the remaining pumpkin batter over the Nutella layer. Run a thin knife through the batter in a few loose figure-eight motions to create chocolate ribbons without blending them away.
  7. Bake for 55–60 minutes, or until a toothpick inserted into the pumpkin portion comes out clean or with only a few moist crumbs. A toothpick inserted directly into Nutella may be chocolate-coated.
  8. Cool the loaf in the pan for about 10–15 minutes, then transfer it to a wire rack. Let it cool for at least 30 minutes before slicing so the crumb can set.

Notes

Use room-temperature eggs for an even batter, and warm thick Nutella in the microwave for 10–15 seconds so it spreads easily. Store the cooled loaf tightly wrapped at room temperature for up to 3 days or refrigerate it for longer storage.
