  • 1 teaspoon Vanilla extract
  • 1 1/2 cups Cold heavy whipping cream
Strawberry Crunch Topping
  • 12 cookies Golden Oreo-style sandwich cookies
  • 1/2 cup Freeze-dried strawberries
  • 3 tablespoons Unsalted butter, melted

Method
 

Step-by-Step
  1. Line the bottom of a 9-inch springform pan with parchment paper. Crush 24 Golden Oreo-style cookies into fine crumbs, mix them with 5 tablespoons melted butter, and press the mixture firmly and evenly into the pan; refrigerate while preparing the filling.
  2. Beat the softened cream cheese, powdered sugar, and vanilla extract until completely smooth. In a separate bowl, whip the cold heavy cream to stiff peaks, then gently fold it into the cream-cheese mixture without overmixing.
  3. Spread the filling over the chilled crust and smooth the surface. Crush 12 cookies and the freeze-dried strawberries into coarse crumbs, combine them with 3 tablespoons melted butter, and sprinkle the mixture evenly over the cheesecake.
  4. Cover the pan and refrigerate the cheesecake for at least 4 hours, preferably overnight. Remove the springform ring before slicing, and garnish with whipped cream and fresh strawberries if desired.

Notes

Use full-fat brick-style cream cheese at room temperature and cold heavy cream for the firmest filling. Keep the strawberry topping coarse for the best texture. For tidy slices, warm a knife under hot water, dry it, and repeat before each cut.
