  • 1/2 cup, about 60 g Confectioners’ sugar
  • 1 teaspoon Pure vanilla extract
  • 1 tablespoon Fresh lemon juice
  • 1 cup, about 240 ml Cold heavy whipping cream
Topping
  • As needed Fresh berries or fruit sauce

Step-by-Step
  1. Crush the digestive biscuits or graham crackers until fine, then stir them with the melted butter until the crumbs are evenly moistened.
  2. Divide the crumb mixture among six small glasses or dessert cups. Press it down lightly rather than compacting it firmly, which keeps the crust easy to spoon through.
  3. Beat the softened cream cheese, confectioners’ sugar, vanilla extract, and lemon juice until smooth and free of lumps.
  4. In a separate bowl, whip the cold heavy cream to soft or medium peaks. Cold cream whips with better volume and helps create a light filling.
  5. Fold the whipped cream into the cream-cheese mixture in two or three additions. Use a gentle motion so the mixture stays airy.
  6. Spoon or pipe the filling over the crumb bases, dividing it evenly among the six cups.
  7. Refrigerate the cups for at least two hours, or four hours for a firmer texture. Garnish with berries, fruit sauce, or grated chocolate shortly before serving.

Notes

Use room-temperature cream cheese to prevent lumps, but keep the whipping cream thoroughly cold. Assemble the cups several hours ahead, and add fresh fruit close to serving time so the topping does not become watery.
