No-Bake Caramel Apple Lush

A cool, creamy layered dessert with a Golden Oreo crust, vanilla cream cheese, pudding, Granny Smith apples, whipped topping, and caramel sauce. This no-bake fall favorite serves a crowd and is best chilled overnight.

Crust
  • 36 cookies Golden Oreo cookies, finely crushed
  • 1/2 cup Unsalted butter, melted
Cream-Cheese Layer
  • 8 ounces Cream cheese, softened
  • 1/4 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 8 ounces Whipped topping, thawed and divided
Pudding Layer
  • 2 3.4-ounce boxes Instant vanilla pudding mix
  • 3 cups Cold milk
Apple and Topping Layers
  • 3 medium apples Granny Smith apples, peeled, cored, and diced
  • 1/2 cup Prepared caramel sauce or caramel ice-cream topping

Method
 

Step-by-Step
  1. Lightly grease or line a 9 x 13-inch baking dish. Crush 36 Golden Oreo cookies into fine crumbs, combine them with the melted butter, and press the mixture firmly into the bottom of the dish.
  2. Refrigerate the crust while preparing the filling. Beat the softened cream cheese, granulated sugar, and vanilla extract until smooth, then fold in about 1 cup of the thawed whipped topping.
  3. Spread the cream-cheese mixture evenly over the chilled cookie crust. Whisk both instant vanilla pudding mixes with the cold milk for about 2 minutes, until thickened.
  4. Spread the thickened pudding evenly over the cream-cheese layer. Peel, core, dice, and pat the apples dry before scattering them evenly over the pudding.
  5. Spread the remaining whipped topping over the diced apples, taking care not to disturb the layers underneath. Drizzle the caramel sauce over the top in thin ribbons.
  6. Cover the dish and refrigerate for at least 4 hours before slicing. Chill overnight when possible for firmer layers and cleaner portions.

Notes

Use small, dry apple pieces to help protect the crust and keep the pudding firm. Granny Smith apples provide the best tart contrast, but Honeycrisp or a mixture of tart apples may also be used. Optional garnishes include chopped pecans, chopped walnuts, extra caramel, or crushed Golden Oreos.
