Cream Cheese Filling
  • 1 8-ounce package cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 8-ounce container frozen whipped topping, thawed
Fruit Layer
  • 1 20-ounce can crushed pineapple, thoroughly drained
  • 2 medium bananas medium bananas, sliced
  • 1 cup fresh strawberries, sliced
Toppings
  • 2 tablespoons, or to taste chocolate syrup
  • 8 cherries maraschino cherries
  • 2 tablespoons, optional chopped nuts, such as peanuts or walnuts

Method
 

Step-by-Step
  1. Beat the softened cream cheese, granulated sugar, and vanilla extract until smooth. Gently fold in the thawed whipped topping until the mixture is evenly combined and fluffy.
  2. Spread half of the cream cheese mixture over the prepared graham cracker crust. Keep the layer even so the fruit can be distributed from edge to edge.
  3. Layer the thoroughly drained crushed pineapple, sliced bananas, and sliced strawberries over the filling. Arrange the fruit gently so the crust stays intact.
  4. Spread the remaining cream cheese mixture over the fruit layer. Smooth the top with a spatula, then drizzle with chocolate syrup.
  5. Garnish with 8 maraschino cherries and optional chopped nuts. Refrigerate for at least 1 hour, or until the pie is chilled and firm, before slicing.

Notes

Drain the pineapple very well to help prevent a soggy crust and loose filling. For the freshest appearance, assemble close to serving time; if preparing several hours ahead, slice the bananas just before layering or lightly coat them with lemon juice to slow browning.
