- Heat the oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan and line it with parchment if desired.
- Mash the bananas in a large bowl, then whisk in the melted butter, sugar, eggs, and vanilla.
- In a separate bowl, whisk together the flour, baking soda, salt, and optional cinnamon.
- Fold the dry ingredients into the banana mixture just until no dry flour remains. Fold in the optional nuts without overmixing.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for approximately 55 to 70 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool the loaf in the pan for 15 to 20 minutes, then remove it and cool completely on a rack before slicing.
Notes
For the best flavor and moisture, use heavily speckled or nearly black bananas. If the top browns too quickly, tent the loaf loosely with foil during the final 15 to 20 minutes. Store the cooled bread tightly wrapped at room temperature for a few days or freeze individual slices.
