Mushroom Gruyere Bruschetta

Bread and Topping
  • 1 baguette Baguette, about 12–14 ounces, cut into 24 slices
  • 3 tablespoons Extra-virgin olive oil, divided
Mushroom Mixture
  • 2 tablespoons Unsalted butter
  • 1 shallot Medium shallot, finely minced
  • 2 cloves Garlic cloves, finely minced
  • 1 pound Mushrooms, thinly sliced; cremini, white mushrooms, or a mixture
  • 1/2 teaspoon Kosher salt, plus more as needed
  • 1/4 teaspoon Freshly ground black pepper
  • 1 teaspoon Fresh thyme leaves
  • 1/4 cup Dry white wine
Finishing
  • 4 ounces, about 1 cup Gruyere cheese, freshly grated
  • 2 tablespoons Fresh parsley, chopped, optional

Method
 

Step-by-Step
  1. Heat the oven to 400°F. Arrange the 24 baguette slices on a baking sheet and brush or drizzle them with about 2 tablespoons of the olive oil.
  2. Toast the baguette slices for 6–8 minutes, turning once if necessary, until lightly crisp and golden. Remove the toast from the oven.
  3. Heat the remaining olive oil and the butter in a large skillet over medium-high heat. Add the minced shallot and cook for 2–3 minutes, until softened.
  4. Add the garlic and cook for about 30 seconds. Stir in the mushrooms, kosher salt, black pepper, and thyme.
  5. Cook for 7–10 minutes, stirring occasionally, until the mushrooms release their moisture and become browned. Pour in the white wine and cook for 2–3 minutes, until nearly evaporated.
  6. Spoon the cooked mushroom mixture onto the toasted baguette slices and sprinkle the freshly grated Gruyere evenly over the tops.
  7. Return the bruschetta to the oven for 3–5 minutes, or broil briefly, until the cheese melts and becomes lightly browned. Garnish with chopped parsley and serve hot.

Notes

Do not crowd the skillet; cook the mushrooms in a single loose layer, working in batches if needed. Grate the Gruyere yourself and assemble shortly before the final bake so the bread stays crisp. A mushroom mixture of cremini, shiitake, and oyster mushrooms adds extra depth.
