Hotcake Batter
  • 1 1/2 cups (188 g) All-purpose flour
  • 3 1/2 teaspoons Baking powder
  • 1 1/4 teaspoons Salt
  • 1 tablespoon Granulated sugar
  • 1 1/4 cups (300 ml) Milk
  • 1 Large egg
  • 3 tablespoons (42 g) Unsalted butter, melted
For Cooking and Serving
  • As needed for the pan and serving Butter
  • As desired for serving Maple syrup or fruit

Step-by-Step
  1. Whisk the flour, baking powder, salt, and granulated sugar together in a large bowl.
  2. In a separate bowl, whisk the milk, egg, and melted butter until combined.
  3. Pour the wet mixture into the dry ingredients and stir just until combined. A few small lumps are desirable, so do not overmix.
  4. Let the batter rest for about 5 minutes while heating a lightly greased skillet or griddle over medium heat.
  5. Pour approximately 1/4 cup of batter onto the heated pan for each hotcake.
  6. Cook for 2–3 minutes, until bubbles form on the surface and the edges look set.
  7. Flip each hotcake once and cook for another 1–2 minutes, until golden brown and cooked through.
  8. Serve immediately with butter, maple syrup, berries, or other desired toppings.

Notes

The batter should be thick but pourable. If it seems overly thick, add milk 1 tablespoon at a time. Avoid overmixing because developing too much gluten can make the hotcakes dense or chewy. Medium heat helps the centers cook before the exteriors become too dark.
