Apple Filling
  • 6 medium apples Baking apples, peeled, cored, and sliced 1/4 inch thick
  • 1/3 cup Granulated sugar
  • 1 tablespoon All-purpose flour or cornstarch
  • 1 tablespoon Lemon juice
  • 1 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg, optional
  • 1/8 teaspoon Salt
Crunchy Topping
  • 1 cup Old-fashioned rolled oats
  • 3/4 cup All-purpose flour
  • 3/4 cup Packed light brown sugar
  • 1 teaspoon Ground cinnamon
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, cold and cut into small cubes
  • 1/2 cup Chopped pecans or walnuts, optional

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Lightly butter an 8-inch or 9-inch square baking dish.
  2. Toss the sliced apples with granulated sugar, flour or cornstarch, lemon juice, cinnamon, optional nutmeg, and salt.
  3. Spread the seasoned apples evenly in the prepared baking dish.
  4. Combine the oats, flour, brown sugar, cinnamon, salt, and optional nuts in a bowl.
  5. Cut in the cold cubed butter with a pastry cutter or your fingertips until coarse crumbs form with some pea-sized pieces remaining.
  6. Scatter the topping evenly over the apples without pressing it down tightly.
  7. Bake for 40–50 minutes, until the apples bubble around the edges and the topping is golden brown.
  8. Let the crisp stand for 10–15 minutes before serving.

Notes

Use a firm mixture of tart and sweet baking apples for the best texture and flavor. Keep the butter cold and leave some larger crumbs in the topping. If the topping browns before the apples are tender, loosely cover the dish with foil for the remainder of baking.
