  • 1/2 cup (113 g) Unsalted butter, melted and slightly cooled, or neutral oil
  • 3/4 cup (150 g) Granulated sugar
  • 1/2 cup (100 g) Packed light brown sugar
  • 2 eggs Large eggs, room temperature
  • 1 teaspoon Vanilla extract
  • 1 cup (225-240 g) Plain pumpkin purée
Optional Additions
  • 2 tablespoons Milk or buttermilk, only if batter is especially thick
  • 1/2 cup Chopped pecans or walnuts, or chocolate chips

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan and line it with parchment paper, leaving some overhang on the long sides so the cooled loaf can be lifted out easily.
  2. Whisk the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and optional cloves together in a medium bowl. Breaking up any pockets of spice or leavener now helps distribute them evenly through the batter.
  3. In a separate large bowl, whisk the melted, slightly cooled butter or neutral oil with the granulated sugar and brown sugar. Add the eggs one at a time, whisking after each addition, then whisk in the vanilla and pumpkin purée.
  4. Add the dry mixture to the pumpkin mixture and fold gently just until no large streaks of flour remain. If the batter seems especially thick, fold in up to 2 tablespoons of milk or buttermilk, then fold in nuts or chocolate chips if using.
  5. Transfer the batter to the prepared loaf pan and smooth the top with a spatula. A smooth surface encourages an even bake while leaving room for the loaf's characteristic center rise.
  6. Bake for 50 to 65 minutes, rotating the pan once near the midpoint for more even browning. If the top becomes dark before the center is ready, tent it loosely with foil during the final 15 to 20 minutes.
  7. Check the center with a toothpick; it should come out with a few moist crumbs but no wet batter. For a more precise check, the internal temperature should be approximately 200 to 205°F (93 to 96°C).
  8. Cool the loaf in the pan for 15 to 20 minutes, then use the parchment overhang to lift it onto a wire rack. Let it cool completely before slicing so the moist crumb can finish setting and the slices stay neat.

Notes

Use plain pumpkin purée rather than pumpkin pie filling. Avoid overmixing after the flour is added. Neutral oil usually keeps the loaf softer over several days, while melted butter provides a richer buttery flavor. Store the completely cooled loaf tightly wrapped at room temperature for up to 3 days or refrigerated for up to 5 days.
