- Heat the oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or lightly grease each cup.
- Mash the bananas in a large bowl until mostly smooth, leaving only a few small pieces for texture.
- Whisk the melted and slightly cooled butter, sugar, lightly beaten egg, and vanilla into the mashed bananas.
- In a separate bowl, whisk together the flour, baking soda, salt, and optional cinnamon.
- Add the dry mixture to the banana mixture and stir just until no dry streaks remain. Fold in walnuts or chocolate chips if using, taking care not to overmix.
- Divide the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 20 to 25 minutes, until the tops are lightly browned and a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool the muffins in the pan for about 5 minutes, then transfer them to a wire rack to finish cooling.
Notes
Use heavily speckled or nearly black bananas for the best sweetness, moisture, and banana flavor. Do not overmix after adding the flour. Store cooled muffins in an airtight container and enjoy within a few days, or freeze them for longer storage.
