- Heat the oven to 375°F (190°C) and lightly coat a standard 12-cup muffin tin with nonstick cooking spray.
- On a lightly floured surface, roll the pie dough to about 1/8-inch thickness. Cut twelve rounds approximately 4 inches in diameter using a large biscuit cutter or bowl.
- Press one dough round into each muffin cup, easing the pastry into the corners without stretching it. Refrigerate the lined tin for about 10 minutes while preparing the filling.
- Whisk the pumpkin purée, evaporated milk, egg, brown sugar, pumpkin pie spice, vanilla extract, and salt in a bowl until smooth and evenly combined.
- Pour the filling into the chilled pastry shells, filling each about three-quarters full. Leave room because the custard puffs slightly as it bakes.
- Bake for 18–25 minutes, until the pastry is golden and the centers are mostly set with a slight jiggle.
- Cool the pies in the muffin tin for about 10 minutes. Loosen the edges with a thin knife, transfer the pies to a wire rack, and cool completely for at least 30 minutes before serving.
Notes
Use pumpkin purée rather than pre-sweetened pumpkin pie filling. Chilling the shaped dough helps the pastry hold its shape and reduces shrinking. Serve with optional whipped cream, cinnamon, or nutmeg.
