Ingredients

Muffin Batter
  • 1 3/4 cups (219 g) All-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1/2 cup (113 g) Unsalted butter, softened
  • 3/4 cup (150 g) Granulated sugar
  • 2 eggs Large eggs, room temperature
  • 1 teaspoon Vanilla extract
  • 1/3 cup (80 g) Sour cream or plain yogurt
  • 1/3 cup (80 ml) Milk
  • 1 to 1 1/2 cups (150–225 g) Fresh or frozen blueberries

Method

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease a 24-cup mini-muffin pan or line it with paper liners.
  2. Whisk the flour, baking powder, baking soda, and salt together in a medium bowl.
  3. Beat the softened butter and sugar in a separate bowl for 2–3 minutes, until light and creamy.
  4. Beat in the eggs one at a time, then mix in the vanilla extract and sour cream or plain yogurt.
  5. Add the dry ingredients alternately with the milk, stirring just until the batter comes together. Do not overmix.
  6. Toss the blueberries with 1 teaspoon of the measured flour, then gently fold them into the batter. Add frozen berries while still frozen.
  7. Divide the batter among the muffin cups, filling each about two-thirds to three-quarters full.
  8. Rest the filled pan for 5–10 minutes if you want taller, rounder tops. Bake for 12–15 minutes, until the tops spring back lightly and a toothpick comes out clean or with a few moist crumbs.
  9. Cool the muffins in the pan for about 5 minutes, then transfer them to a wire rack.

Notes

Fresh or frozen blueberries both work well. Keep frozen blueberries frozen before folding them in to reduce purple streaking. Store cooled muffins in an airtight container and enjoy within a few days.
