Mediterranean Quinoa Salad

This fresh quinoa salad combines fluffy quinoa, crisp vegetables, herbs, feta, and Kalamata olives with a lemon-Dijon dressing. It makes 4–6 servings and tastes even better after the flavors rest together.

Quinoa and Salad
  • 1 cup Uncooked quinoa, rinsed
  • 2 cups Water or vegetable broth
  • 1 cup Cherry tomatoes, halved
  • 1 Medium cucumber, diced
  • 1/2 Small red onion, finely diced
  • 1/2 cup Fresh parsley, chopped
  • 1/4 cup Fresh mint, chopped, optional
  • 1/2 cup Feta cheese, crumbled
  • 1/3 cup Kalamata olives, sliced, optional
Lemon Dressing
  • 1/4 cup Extra-virgin olive oil
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Red-wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 Small garlic clove, minced
  • 1/2 teaspoon Honey or maple syrup, optional
  • 1/2 teaspoon Kosher salt, plus more to taste
  • 1/4 teaspoon Freshly ground black pepper

Method
 

Step-by-Step
  1. Rinse 1 cup of quinoa thoroughly in a fine-mesh strainer, then drain it well. Combine the rinsed quinoa and 2 cups of water or vegetable broth in a saucepan and bring the mixture to a boil.
  2. Reduce the heat to low, cover the saucepan, and simmer for about 15 minutes, or until the liquid is absorbed and the quinoa germ separates into a visible spiral. Remove the pan from the heat, keep it covered for 5 minutes, then fluff the quinoa with a fork and cool it to room temperature.
  3. Whisk together the olive oil, lemon juice, red-wine vinegar, Dijon mustard, minced garlic, optional honey or maple syrup, kosher salt, and black pepper. Taste the dressing and adjust it with additional salt or lemon juice if needed.
  4. Add the cooled quinoa to a large bowl with the cherry tomatoes, cucumber, red onion, parsley, optional mint, feta, and optional Kalamata olives. Pour the dressing over the salad and toss gently until the ingredients are evenly coated.
  5. Chill the dressed salad for 20–30 minutes before serving if desired, allowing the flavors to mingle. Taste once more and adjust the salt, pepper, or lemon juice just before bringing it to the table.

Notes

Cool the quinoa before combining it with the vegetables, herbs, and feta so the salad stays fresh and crisp. Cooking quinoa in vegetable broth adds extra savoriness, and resting the dressed salad for 15–30 minutes gives the flavors time to come together.
