Mashed Potato Stuffing Balls

Cold mashed potatoes and leftover stuffing combine with cheese, herbs, and egg to create crisp, golden bites. Bake them for an easy appetizer, side dish, or leftover-Thanksgiving snack.

Ingredients
  

Mashed Potato Stuffing Balls
  • 3 cups Cold, prepared mashed potatoes
  • 2 cups Cold, prepared stuffing or dressing
  • 1 Large egg
  • 1/2 cup Shredded sharp cheddar, Parmesan, or a mixture of both
  • 2 tablespoons Chopped fresh parsley or chives
  • 1/4 teaspoon Black pepper
For Coating
  • 1/2 cup Panko breadcrumbs
For the Pan
  • 1-2 tablespoons Cooking spray or vegetable oil
Optional Additions
  • 1/2 cup Finely chopped leftover turkey or ham
  • 2 tablespoons Minced green onion
For Serving
  • 1/4 cup Leftover cranberry sauce

Method
 

Step-by-Step
  1. Combine the cold mashed potatoes, cold stuffing, egg, cheese, parsley or chives, and black pepper in a large bowl. Mix just until evenly combined, taking care not to overmix.
  2. Refrigerate the mixture for 20–30 minutes. This firms the potatoes and stuffing so the balls are easier to shape and less likely to fall apart.
  3. Heat the oven to 400°F. Line a baking sheet with parchment paper and lightly coat it with cooking spray.
  4. Scoop approximately 1/4 cup of mixture for each ball. Compress each portion firmly with your hands and shape it into a round ball, making about 12–14 balls.
  5. Roll each ball in the panko breadcrumbs and arrange the coated balls on the prepared baking sheet. Spray or lightly brush the tops with cooking spray or vegetable oil.
  6. Bake for 20–25 minutes, turning the balls once halfway through the cooking time. They are ready when the coating is golden and the centers are heated through.
  7. Serve the balls hot with turkey gravy, additional leftover gravy, or cranberry sauce alongside. For a fried version, heat about 1 inch of neutral oil to 350°F and fry in batches for approximately 3–4 minutes, turning carefully, then drain on a paper-towel-lined plate.

Notes

Use cold, fairly firm mashed potatoes and stuffing. If the mixture is too loose, mix in 1–2 tablespoons of breadcrumbs or flour. If formed balls seem soft, chill them again before baking or frying. Avoid adding much salt at first because the prepared stuffing, potatoes, cheese, and gravy may already be well seasoned.
