Noatmeal Base
  • 1/2 cup Unsweetened almond milk
  • 2 tablespoons Hemp hearts
  • 2 tablespoons Ground flaxseed
  • 1 tablespoon Chia seeds
  • 1 tablespoon Coconut flour
Flavor and Finish
  • 2 tablespoons Finely chopped walnuts, plus extra for topping
  • 1 tablespoon Butter or coconut oil
  • 1/2 teaspoon Maple extract
  • 1/4 teaspoon Ground cinnamon
  • 1 pinch Salt
  • Equivalent to 1-2 tablespoons sugar Keto sweetener, such as powdered erythritol or liquid stevia

Method
 

Step-by-Step
  1. Combine the almond milk, hemp hearts, ground flaxseed, chia seeds, coconut flour, cinnamon, salt, maple extract, and keto sweetener in a small saucepan.
  2. Let the mixture stand for 1-2 minutes so the chia seeds and flaxseed can begin absorbing the almond milk.
  3. Cook over low to medium-low heat for approximately 5 minutes, stirring frequently, until thick and porridge-like. Do not boil, because overheating can make the mixture gummy.
  4. Stir in the butter or coconut oil and the finely chopped walnuts once the noatmeal has thickened.
  5. Serve immediately with additional walnuts and, if desired, a small amount of butter, cream, or unsweetened almond milk.

Notes

For a smoother oatmeal-like texture, finely grind or chop the chia, flaxseed, and walnuts. Add sweetener and maple extract gradually. For a thicker bowl, rest the cooked noatmeal for 2-3 minutes; loosen it with a splash of almond milk if needed.
