Low-Carb Sausage, Peppers, and Onions

A colorful one-skillet dinner made with Italian sausage, three kinds of bell peppers, onions, garlic, and Italian seasoning. It is naturally low-carb because it skips pasta, bread, sugar, and marinara sauce.

  • 1 tablespoon Olive oil
  • 1 pound Italian sausage links, sweet or hot
  • 1 Medium yellow onion, thinly sliced
  • 1 Large red bell pepper, thinly sliced
  • 1 Large green bell pepper, thinly sliced
  • 1 Large yellow or orange bell pepper, thinly sliced
Seasonings and Liquid
  • 3 Garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Kosher salt, plus more to taste
  • 1/4 teaspoon Freshly ground black pepper
  • 1/4 teaspoon Crushed red-pepper flakes, optional
  • 1/2 cup Low-sodium chicken broth or water
Garnish
  • 1 tablespoon Fresh parsley, chopped, optional

Method
 

Step-by-Step
  1. If using sausage links, prick them lightly or remove the casings. Heat a large skillet over medium heat and add the olive oil.
  2. Brown the sausages for 6–8 minutes, turning occasionally. They do not need to be fully cooked at this stage; transfer them to a plate.
  3. Add the sliced onion and peppers to the skillet. Cook for 7–10 minutes, stirring occasionally, until softened and lightly browned.
  4. Add the garlic, Italian seasoning, kosher salt, black pepper, and optional crushed red-pepper flakes. Cook for about 30 seconds.
  5. Pour in the chicken broth or water and scrape up the browned bits from the bottom of the skillet.
  6. Return the sausages to the pan. Cover and simmer for 8–12 minutes, turning the sausages once, until cooked through. Pork sausage should reach 160°F/71°C internally, while poultry sausage should reach 165°F/74°C.
  7. Slice the sausages into pieces if desired and toss them with the vegetables. Garnish with chopped parsley and serve.

Notes

For the best texture, slice the vegetables evenly and avoid overcrowding the skillet. Store leftovers in a covered container in the refrigerator and reheat gently in a skillet or microwave until hot.
