- Place the orange gelatin powder in a mixing bowl. Pour in the boiling water and whisk until every bit of gelatin has dissolved.
- Add the ice cubes and stir steadily as the gelatin mixture cools and begins to thicken. Remove any ice that has not melted before adding the cream.
- Pour in the cold heavy cream and add the vanilla extract if using. Stir briefly so the ingredients are evenly distributed.
- Beat with an electric mixer or blend with an immersion blender for about 2 to 4 minutes, until the mixture is pale, thick, and airy. Stop when it has a whipped, spoonable consistency.
- Divide the mixture among four small dessert dishes or glasses. Smooth or swirl the tops, then refrigerate for at least 1 hour and preferably 2 hours before serving.
Notes
Use the small 3-ounce box of sugar-free gelatin; a standard large box contains twice as much mix and changes the liquid-to-gelatin ratio. For the lightest texture, chill the heavy cream, mixing bowl, and beaters beforehand. Vanilla gives the most pronounced creamsicle flavor, while a small amount of orange extract may be used sparingly because it is potent. Sweetener and carbohydrate totals vary by gelatin brand and the exact heavy cream used.
