Low-Carb Blueberry Lemon Bars

A bright, creamy lemon custard bar made with a buttery almond-flour crust and fresh blueberries. These chilled low-carb bars are ideal for spring gatherings, afternoon coffee, or a refreshing dessert.

Ingredients
  

Crust
  • 1 1/2 cups (168 g) Finely ground almond flour
  • 1/4 cup (about 45–50 g) Powdered erythritol or powdered allulose
  • 1/4 teaspoon Fine salt
  • 5 tablespoons (70 g) Unsalted butter, melted
Lemon-Blueberry Filling
  • 4 eggs Large eggs
  • 3/4 cup (150–170 g) Granulated allulose or powdered erythritol
  • 1/2 cup (120 ml) Fresh lemon juice
  • 1 1/2–2 tablespoons from 2 lemons Finely grated lemon zest
  • 2 tablespoons Coconut flour
  • 1/4 teaspoon Salt
  • 3/4 cup (about 110 g) Fresh blueberries
Optional Garnish
  • as needed for dusting Powdered erythritol
  • as needed for garnish Additional lemon zest

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving enough overhang on two sides to lift out the chilled bars later.
  2. Combine the almond flour, powdered sweetener, and fine salt in a bowl. Stir in the melted butter until the mixture looks like damp crumbs and holds together when pressed.
  3. Press the crust mixture firmly and evenly into the prepared pan. Bake for 10–12 minutes, just until the edges become lightly golden.
  4. Whisk the eggs, granulated allulose or powdered erythritol, lemon juice, lemon zest, coconut flour, and salt until smooth. Let the mixture stand for 2–3 minutes so the coconut flour can hydrate, then whisk once more.
  5. Scatter the fresh blueberries over the warm crust. Pour the lemon filling evenly over the berries, taking care not to disturb the crust.
  6. Bake for another 20–26 minutes, until the center is set with only a slight jiggle. Avoid overbaking because the custard continues to firm as it cools.
  7. Cool the pan completely at room temperature, then refrigerate the bars for at least 2 hours. Lift them out using the parchment overhang, dust with powdered erythritol if desired, and cut into 12 bars.

Notes

Allulose gives the filling a softer, more custard-like texture and is less likely to recrystallize than erythritol. If using erythritol, powdered erythritol is preferable. Fresh blueberries are recommended because frozen berries release extra liquid; if using frozen berries, do not thaw them and expect several additional minutes of baking.
