- Pat the steak cubes dry, then season them with salt, black pepper, and crushed red pepper flakes.
- Heat the olive oil in a large skillet over high heat. Add the steak in a single layer and sear for approximately 2–3 minutes per side, working in batches if needed, until browned and cooked to your preferred doneness. Transfer the steak to a plate.
- Reduce the heat to medium and add 1 tablespoon of butter, minced garlic, parsley, thyme, rosemary, lemon juice, and beef stock. Stir for 1–2 minutes, until fragrant and lightly reduced.
- Add the remaining butter and zucchini noodles. Toss and cook for about 2–3 minutes, just until the noodles are tender-crisp.
- Return the steak to the skillet and toss briefly with the zucchini noodles and sauce. Taste and adjust salt, pepper, and lemon juice, then garnish with parsley and serve immediately.
Notes
Avoid overcrowding the skillet because the steak can steam instead of brown. Zucchini releases water as it cooks, so keep its cooking time short and serve the dish immediately for firmer noodles.
