Oat Bar Mixture
  • 1 1/2 cups All-purpose flour
  • 1 cup Old-fashioned rolled oats
  • 3/4 cup Packed light brown sugar
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Fine salt
  • 3/4 cup Unsalted butter, melted
  • 1 teaspoon Vanilla extract
Cranberry Filling
  • 1 to 1 1/2 cups Leftover cranberry sauce

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, or grease the pan thoroughly so the bars release easily.
  2. Mix the flour, rolled oats, light brown sugar, baking soda, and fine salt in a medium bowl. Stir well so the leavening and salt are evenly distributed throughout the dry ingredients.
  3. Add the melted unsalted butter and vanilla extract. Stir until the mixture forms a crumbly dough with no obvious dry pockets.
  4. Press approximately two-thirds of the oat mixture firmly into the bottom of the prepared pan. Create an even layer and press especially well into the corners.
  5. Spread 1 to 1 1/2 cups of cranberry sauce evenly over the crust. If the sauce is very thick, stir in 1 tablespoon of water or orange juice to make it easier to spread.
  6. Crumble the remaining oat mixture over the cranberry layer. Leave a few small spaces so the ruby filling peeks through the topping as it bakes.
  7. Bake for 30–35 minutes, until the top is lightly browned and the cranberry filling is bubbling around the edges. Place the pan on a rack and cool completely before cutting.

Notes

Chilling the cooled pan makes cleaner slices. Whole-berry cranberry sauce creates a more textured filling, while jellied sauce produces a smoother layer. If the sauce is especially sweet, add orange zest; if it is runny, simmer it briefly or use slightly less filling.
