Layered Chicken Enchilada Bake

A comforting chicken enchilada casserole layered with corn tortillas, creamy chicken soup sauce, enchilada sauce, green chiles, onion, and cheddar cheese. It serves about six and is ready in approximately 50 to 60 minutes, including resting time.

  • 10 3/4 ounces Condensed cream of chicken soup, undiluted
  • 1 cup Sour cream
  • 10 ounces Enchilada sauce
  • 4 ounces Chopped green chiles, drained
  • 2 cups Cooked chicken, cubed or shredded
  • 1/2 cup Chopped onion
  • 6 tortillas Corn tortillas, 6 inches, cut into 1-inch strips
  • 1 cup Shredded cheddar cheese

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and grease a 2-quart baking dish, approximately 8 x 11 inches.
  2. Stir the undiluted condensed cream of chicken soup and sour cream together in one bowl until smooth.
  3. In a separate bowl, combine the enchilada sauce with the drained chopped green chiles.
  4. Arrange half of the tortilla strips across the bottom of the prepared baking dish.
  5. Layer half of the cooked chicken and half of the chopped onion over the tortilla strips.
  6. Spread half of the soup-and-sour-cream mixture over the chicken, then spoon half of the enchilada-sauce mixture over it.
  7. Repeat the tortilla, chicken, onion, creamy mixture, and enchilada-sauce layers with the remaining ingredients.
  8. Sprinkle the shredded cheddar evenly over the top of the casserole.
  9. Bake the dish uncovered for 25 to 30 minutes, until hot and bubbling and the cheese is melted.
  10. Let the casserole stand for 5 to 10 minutes before serving so the layers can firm up.

Notes

Warm the corn tortillas briefly before cutting or layering to help prevent dry, tough pieces. Rotisserie chicken or leftover roasted chicken is ideal when shredded into bite-size pieces. Refrigerate leftovers promptly and reheat individual portions until hot.
