  • 12-14 ounces Smoked kielbasa, sliced into 1/4-inch rounds
  • 1 medium Medium yellow onion, diced
  • 2 medium Medium carrots, diced
  • 2 ribs Celery ribs, diced
  • 3 cloves Garlic cloves, minced
  • 6 cups Low-sodium chicken broth or stock
  • 1 14-15 ounce can Diced tomatoes with juices
  • 1 15 ounce can Cannellini or great northern beans, drained and rinsed
Seasonings
  • 1/2 teaspoon Dried thyme
  • 1/2 teaspoon Smoked paprika
  • 1/2 teaspoon, plus more to taste Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
Greens and Finish
  • 1 bunch, about 6-8 ounces Kale, stems removed and leaves chopped
  • 1 tablespoon, optional Lemon juice or red wine vinegar

Step-by-Step
  1. Heat the olive oil in a large Dutch oven or soup pot over medium heat. Add the sliced kielbasa and cook for 4–5 minutes, turning occasionally, until lightly browned; transfer it to a plate if the pot becomes crowded.
  2. Add the diced onion, carrots, and celery to the same pot. Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften and pick up the savory browned bits from the sausage.
  3. Stir in the minced garlic, dried thyme, smoked paprika, kosher salt, and black pepper. Cook for about 30 seconds, just until the garlic is fragrant.
  4. Pour in the chicken broth and diced tomatoes with their juices. Stir in the drained beans and browned kielbasa, scraping the bottom of the pot to loosen any flavorful bits.
  5. Bring the soup to a boil, then reduce the heat and simmer uncovered for 15–20 minutes. Continue cooking until the carrots and celery are tender and the broth tastes savory and well blended.
  6. Stir in the chopped kale and simmer for 4–6 minutes, until it is wilted and tender but still a lively green. Taste the soup and adjust the salt and pepper carefully.
  7. Add the lemon juice or red wine vinegar if desired, stirring it through just before serving. Ladle the hot soup into bowls and serve immediately with crusty bread.

Notes

Brown the kielbasa first for a richer smoky base. Season lightly because both kielbasa and broth may contain salt, then adjust after simmering. For a potato variation, add 2 medium peeled and diced potatoes with the broth and omit the white beans. Store cooled soup in the refrigerator and reheat gently on the stovetop.
