Crust
  • 1 cup (96 g) Finely ground almond flour
  • 2 tablespoons (about 24 g) Powdered or granulated keto sweetener, such as erythritol or allulose
  • 3 tablespoons (42 g) Unsalted butter, melted
  • 1 pinch Salt
Cheesecake Filling
  • 16 ounces (454 g) Full-fat cream cheese, softened to room temperature
  • 1/2 cup (about 90–100 g) Powdered keto sweetener
  • 1 egg Large egg, room temperature
  • 1 teaspoon Vanilla extract
  • 1/4 cup (60 g) Full-fat sour cream
Optional Toppings
  • 1/4 teaspoon Lemon zest
  • As needed Fresh berries or sugar-free chocolate chips

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
  2. Mix the almond flour, crust sweetener, salt, and melted butter until the mixture resembles damp crumbs. Divide it among the liners, using roughly 1 tablespoon per cup, and press firmly.
  3. Bake the crusts for 5 minutes. Remove the pan and reduce the oven temperature to 325°F (165°C).
  4. Beat the softened cream cheese and powdered sweetener on low to medium speed until smooth, avoiding excess air.
  5. Add the egg, vanilla, and sour cream. Mix just until combined and smooth, scraping down the bowl as needed.
  6. Divide the filling among the partially baked crusts.
  7. Bake at 325°F (165°C) for 18–22 minutes, until the edges look set and the centers still have a slight jiggle.
  8. Cool the cheesecakes in the pan, then refrigerate for at least 2 hours. Overnight chilling is best for the firmest, cleanest bites.
  9. Remove the liners after chilling and add optional fresh berries, lemon zest, or a few sugar-free chocolate chips before serving.

Notes

Use room-temperature ingredients for the smoothest filling. Do not overmix or overbake. For a softer texture, allulose generally performs well; erythritol may recrystallize slightly when chilled. Let overnight-chilled cheesecakes stand at room temperature for 5–10 minutes before serving.
