Juicy Herb-Roasted Turkey Breast

A bone-in, skin-on turkey breast is rubbed with garlic herb butter, roasted with onion and broth, and rested until juicy and tender. It is an easy, flavorful dinner centerpiece for holidays or a comforting family meal.

Turkey
  • 1 4–5 pound breast Bone-in, skin-on turkey breast
Herb Butter
  • 4 tablespoons Unsalted butter, softened
  • 1 tablespoon Olive oil
  • 4 cloves Garlic cloves, finely minced
  • 1 tablespoon Fresh rosemary, finely chopped
  • 1 tablespoon Fresh thyme leaves
  • 1 tablespoon Fresh sage, finely chopped
  • 1 teaspoon Finely grated lemon zest
  • 1 1/2 teaspoons Kosher salt
  • 3/4 teaspoon Freshly ground black pepper
Roasting Pan
  • 1 medium Medium onion, quartered
  • 1 cup Low-sodium chicken or turkey broth
Serving
  • 1 lemon, optional Lemon, cut into wedges

Method
 

Step-by-Step
  1. Heat the oven to 425°F. Pat the turkey breast thoroughly dry with paper towels, place it skin-side up in a roasting pan or oven-safe skillet, and tuck the wing tips under the breast.
  2. Combine the softened butter, olive oil, minced garlic, rosemary, thyme, sage, lemon zest, kosher salt, and black pepper in a small bowl until evenly mixed.
  3. Gently loosen the skin from the meat with your fingers, taking care not to tear it. Spread about two-thirds of the herb butter directly over the breast meat underneath the skin, then rub the remaining butter over the outside of the skin.
  4. Arrange the quartered onion and optional lemon wedges around the turkey. Pour the broth into the bottom of the pan, keeping it away from the turkey skin so the skin can brown properly.
  5. Roast at 425°F for 20 minutes. Reduce the oven temperature to 350°F and continue roasting for another 60–85 minutes, depending on the breast’s shape and thickness.
  6. Check the thickest part of the breast with an instant-read thermometer, inserting it away from the bone. The turkey is safely cooked when it reaches 165°F; if the skin browns too quickly, loosely cover it with foil.
  7. Transfer the turkey to a cutting board, tent it loosely with foil, and let it rest for 15–20 minutes. Carve across the breast into slices and spoon the pan juices over the meat before serving.

Notes

For better browning and flavor, season the turkey and refrigerate it uncovered overnight when convenient, then let it sit at room temperature for about 30 minutes before roasting. Always use the internal temperature rather than the clock alone to judge doneness.
