Tender lean chicken burgers made juicy with Greek yogurt, grated onion, and panko breadcrumbs. Serve them on whole-grain buns with fresh vegetables and your favorite light sauce.

Ingredients
  

Chicken Burger Patties
  • 1 lb (450 g) Lean ground chicken
  • 1 large Large egg
  • 1/2 cup (about 50 g) Panko breadcrumbs
  • 1/4 cup, or about 1/2 small onion Finely grated onion
  • 2 cloves Garlic cloves, finely minced
  • 2 tablespoons Plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons Fresh parsley or cilantro, finely chopped
  • 1 teaspoon Paprika
  • 3/4 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
For Cooking and Serving
  • 1 tablespoon Olive oil
  • 4 buns Whole-grain hamburger buns
  • as needed lettuce, tomato, sliced onion, avocado, pickles, or yogurt-based sauce Optional toppings

Method
 

Step-by-Step
  1. Combine the ground chicken, egg, panko breadcrumbs, grated onion, garlic, Greek yogurt, Dijon mustard, Worcestershire sauce, herbs, paprika, salt, and black pepper in a large bowl.
  2. Mix gently with clean hands or a fork just until the ingredients are evenly combined. Avoid compacting or overworking the mixture, since that can make the finished burgers dense.
  3. Divide the mixture into four equal portions and shape each portion into a patty slightly wider than the buns. Place the patties on a plate and chill for 20–30 minutes if time allows, which helps the soft chicken mixture hold together.
  4. Heat the olive oil in a large skillet or grill pan over medium heat. When the oil is hot, carefully add the patties without crowding the pan.
  5. Cook the patties for approximately 5–6 minutes per side, turning once. Continue cooking until browned on both sides and the centers reach 165°F (74°C) on an instant-read thermometer.
  6. Serve the chicken burgers on whole-grain buns with lettuce, tomato, onion, avocado, pickles, or a yogurt-based sauce. Add the toppings just before serving so the buns stay fresh and the vegetables remain crisp.

Notes

Grate the onion so its moisture keeps the lean chicken juicy. Cook by temperature rather than appearance, and avoid cooking well beyond 165°F (74°C) because ground chicken can dry quickly. Refrigerate leftovers promptly and reheat gently.
