- Cook the bacon until crisp, drain it thoroughly, and crumble it finely. Soften the cream cheese so it blends smoothly with the sour cream and shredded cheeses.
- Heat the oven to 350°F (175°C). Lightly coat a 24-cup mini muffin pan with nonstick cooking spray.
- Press one wonton wrapper into each mini muffin cup, gently pleating the corners if needed to form small pastry cups.
- Mix the softened cream cheese, sour cream, cheddar, mozzarella, bacon, minced jalapeños, and sliced green onions in a bowl until evenly combined.
- Spoon approximately 1 tablespoon of filling into each wonton cup. Avoid overfilling because the cheese mixture expands slightly as it bakes.
- Bake for 10–15 minutes, or until the filling is hot and lightly browned and the wonton edges are crisp and golden.
- Let the baked cups cool in the pan for 2–3 minutes before removing them carefully. Serve warm.
Notes
For less heat, remove all jalapeño seeds and membranes and pat the minced peppers dry. For more heat, leave some membranes intact. Drain the bacon well to help the wonton shells stay crisp. Assemble shortly before baking if making ahead; covered, refrigerated cups may need a few extra minutes in the oven when baked cold.
