- Blend or finely process half of a medium English cucumber until liquid, then strain it through a fine-mesh strainer. Measure 2 ounces of cucumber juice for the margaritas.
- Rub lime wedges around the rims of two glasses, then dip the rims in coarse kosher salt or Tajín. Fill the glasses with ice.
- Add the sliced jalapeño, fresh lime juice, and agave nectar or simple syrup to a cocktail shaker. Muddle gently to release the pepper flavor and heat without crushing the jalapeño too aggressively.
- Add the blanco tequila, orange liqueur, cucumber juice, and ice to the shaker. Shake vigorously for about 10 to 15 seconds until thoroughly chilled.
- Strain the margarita into the prepared glasses over fresh ice. Garnish with cucumber ribbons or slices, lime wedges, and jalapeño rings.
Notes
Remove the jalapeño seeds and inner membranes for a milder drink, or leave some or all of them for more heat. Muddle lightly because forceful muddling can make the pepper taste bitter or overly vegetal. Use fresh lime juice, a crisp unwaxed cucumber, and chilled ingredients for the best flavor and less dilution.
