Ingredients
  

Italian Meatballs
  • 1/2 lb (225 g) Ground beef, preferably 80-85% lean
  • 1/2 lb (225 g) Ground pork
  • 1/2 cup (45-50 g) Plain breadcrumbs
  • 1/3 cup (30 g) Finely grated Parmesan cheese
  • 1 Large egg
  • 2 Garlic cloves, finely minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Dried Italian seasoning or dried oregano
  • 3/4 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons Milk, only if mixture seems dry
  • 1 tablespoon Olive oil, if pan-frying
Salad
  • 2 large hearts, or about 8 cups greens Romaine hearts, chopped, or mixed salad greens
  • 2 cups Cherry or grape tomatoes, halved
  • 1 Medium cucumber, sliced or quartered
  • 1/2 Small red onion, thinly sliced
  • 1/2 cup Pitted Kalamata or black olives
  • 1/2 cup Pepperoncini, sliced, optional
  • 4 oz (115 g) Fresh mozzarella pearls or cubed mozzarella
  • 1/4 cup Shaved or grated Parmesan
  • 2 tablespoons Fresh basil or parsley, chopped
Italian Vinaigrette
  • 1/3 cup Extra-virgin olive oil
  • 3 tablespoons Red-wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 Small garlic clove, finely grated or minced
  • 1/2 teaspoon Dried oregano
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
  • 1-2 tablespoons Water, as needed to loosen

Method
 

Step-by-Step
  1. Heat the oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly oil it. In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan, egg, garlic, parsley, Italian seasoning, salt, and pepper.
  2. Mix the meat mixture gently with your hands just until the ingredients are combined. If it appears dry or difficult to shape, add the milk, then chill the mixture for 15–20 minutes if time allows.
  3. Shape the mixture into approximately 20–24 meatballs, each about 1 1/2 inches (4 cm) wide. Arrange them on the prepared baking sheet with a little space between each one.
  4. Bake the meatballs for 15–18 minutes, turning them once if desired, until browned and cooked through. Check that the centers reach 160°F (71°C); alternatively, brown them in 1 tablespoon olive oil in a skillet, cover, and cook until done.
  5. Whisk the olive oil, red-wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper in a bowl or shake them in a jar. Add 1–2 tablespoons water if the vinaigrette needs to be loosened.
  6. Place the romaine or mixed greens in a large serving bowl and add the tomatoes, cucumber, red onion, olives, pepperoncini, mozzarella, and fresh herbs. Toss with most of the dressing immediately before serving.
  7. Top the dressed salad with warm or slightly cooled meatballs, then finish with the shaved Parmesan and remaining vinaigrette. Serve promptly while the greens are crisp and the meatballs are still pleasantly warm.

Notes

Do not overwork the meat mixture because gentle mixing keeps the meatballs tender. Keep the meatballs separate from the dressed greens until serving to prevent wilting and excess greasiness. Store components separately in the refrigerator and assemble fresh.
