- Peel the sweet potatoes and cut them into evenly sized 1-inch chunks. Add 1/2 cup water to the Instant Pot, then add the potatoes, brown sugar, butter, cinnamon, nutmeg, vanilla, and salt.
- Secure the lid and set the valve to sealing. Select High Pressure for 4 minutes, allowing approximately 8 to 10 minutes for the cooker to build pressure.
- When the cooking cycle ends, use a quick release, or allow a 5-minute natural release followed by a quick release. Open the lid carefully once the pin drops.
- Gently stir the potatoes with the buttery brown-sugar liquid. Use a soft spatula or wooden spoon and avoid vigorous stirring so the tender chunks remain intact.
- For a thicker glaze, transfer the cooked potatoes to a serving bowl and select Sauté. Simmer the liquid for 2 to 4 minutes, stirring gently, then turn off the cooker promptly and pour the syrupy sauce over the potatoes.
