  • 8 Large eggs
  • 1/2 cup Skim milk
  • 1 cup Frozen diced hash-brown potatoes, thawed
  • 1 cup Lean diced ham, about 5 ounces
  • 1/2 cup Diced bell pepper
  • 1/4 cup Finely diced green onion or yellow onion
  • 1 cup Reduced-fat shredded cheddar cheese
Seasonings
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
  • 1/4 teaspoon or pinch Garlic powder or paprika, optional

Method
 

Step-by-Step
  1. Spray a 7-inch round Instant Pot-safe baking pan, push pan, or springform pan with cooking spray. Spread the thawed hash browns over the bottom, then layer on the ham, bell pepper, onion, and reduced-fat cheddar.
  2. Whisk the eggs, skim milk, kosher salt, black pepper, and optional garlic powder or paprika until blended. Pour the egg mixture evenly over the layered filling.
  3. Cover the pan tightly with aluminum foil. Add 1 cup water to the Instant Pot, place in the trivet, and set the covered pan on the trivet.
  4. Lock the lid and cook on High Pressure for 25 minutes. Allow a natural pressure release for 10 minutes, then carefully release any remaining pressure.
  5. Remove the pan and let the casserole rest for 5 to 10 minutes. Confirm that the center is set and has reached approximately 160°F, then slice and serve.

Notes

Covering the pan keeps condensation from dripping onto the eggs. A natural release helps the casserole finish setting and lowers the chance of a sunken or rubbery texture. For easier removal, use a 7-inch springform pan or a pan with a removable bottom, and cool briefly before slicing.
