Ingredients
  

Chicken and Seasoning
  • pounds Boneless, skinless chicken breasts
  • ½ teaspoon Kosher salt
  • ½ teaspoon Freshly ground black pepper
  • 1 teaspoon Italian seasoning
Sauce
  • 1 cup Low-sodium chicken broth
  • ½ cup Packed light brown sugar
  • ¼ cup Low-sodium soy sauce
  • 1 tablespoon Minced garlic
For Browning and Thickening
  • 1 tablespoon Olive oil
  • 1 tablespoon Cornstarch
  • 2 tablespoons Cold water

Step-by-Step
  1. Pat the chicken dry, then season both sides with kosher salt, black pepper, and Italian seasoning.
  2. Select Sauté on the Instant Pot. Add the olive oil if using, brown the chicken briefly on both sides in batches if needed, and remove it before it cooks through.
  3. Pour the chicken broth into the pot and scrape the bottom thoroughly to loosen every browned bit.
  4. Stir together the brown sugar, soy sauce, and minced garlic, then add the mixture to the broth.
  5. Return the chicken to the pot and arrange it in a single layer when possible. Secure the lid and cook on High Pressure for 10 minutes for average-size breasts, or 12–15 minutes for particularly thick pieces.
  6. Let the pressure release naturally for 5 minutes, then carefully release the remaining pressure.
  7. Check the thickest part of each breast with an instant-read thermometer; the chicken is ready when it reaches 165°F (74°C).
  8. For a thicker glaze, remove the chicken and select Sauté. Whisk the cornstarch with cold water, stir the slurry into the liquid, and simmer for 1–3 minutes until glossy.
  9. Slice the chicken, spoon the sauce over it, and serve immediately with rice, mashed potatoes, or steamed vegetables.

Notes

Chicken thickness affects cooking time more than total weight, so use similarly sized breasts or pound thick portions to an even thickness. If using regular soy sauce instead of low-sodium soy sauce, reduce or omit the kosher salt. Store leftovers refrigerated in a covered container and reheat gently with a spoonful of sauce.
