- Place the dry elbow macaroni, water, and salt in a large microwave-safe mug or bowl. Choose a container substantially larger than the ingredients because the water can foam and boil over.
- Microwave uncovered on high for about 2 minutes, then stir thoroughly. Continue microwaving in 1–2-minute intervals, stirring between intervals, until the pasta is tender and most of the water has been absorbed; the total pasta-cooking time is usually 4–6 minutes.
- Stir in the milk and shredded cheddar cheese once the pasta is tender. Microwave for an additional 20–30 seconds, then stir until the cheese melts and the sauce becomes creamy.
- Season with black pepper if desired, then let the macaroni and cheese stand for about 1 minute. The sauce thickens as it cools, so this short rest improves the final texture.
Notes
Microwave power varies considerably, so use the pasta texture and remaining liquid as your guide. Stir often and use a large bowl to reduce sticking and prevent boilover. Add the cheese only after the pasta is cooked and microwave it briefly to help prevent an oily or grainy sauce.
