  • 1 tablespoon, chopped Fresh dill or flat-leaf parsley

  • 1 teaspoon, optional Extra-virgin olive oil

Method
 

Step-by-Step
  1. Rinse and dry the cucumber. Trim the ends and cut it into roughly 1/2-inch-thick rounds, lightly scoring or partially peeling it first if you want a decorative edge.
  2. Pat the cucumber rounds dry with paper towels. This removes surface moisture and helps the hummus stay in place.
  3. Spoon or pipe about 1 teaspoon of hummus onto each cucumber slice. A small zip-top bag with the corner snipped off makes piping quick and tidy.
  4. Top each bite with a little tomato, feta, chopped Kalamata olive, and fresh dill or parsley. Finish with a small drizzle of olive oil and black pepper, if desired.
  5. Serve immediately, or refrigerate the assembled bites loosely covered for up to about 2 hours.

Notes

Use thick cucumber slices and dry them well to reduce sogginess. English cucumbers are firm, less watery, and have fewer seeds, but regular garden cucumbers may be substituted. For dairy-free bites, omit the feta or use a plant-based feta alternative.
