Step-by-Step
- Warm the tortillas in a dry skillet over medium heat for about 20 to 30 seconds per side. Alternatively, wrap them in a damp towel and microwave briefly, then keep them warm while preparing the eggs.
- Whisk the eggs with the kosher salt and freshly ground black pepper until the yolks and whites are fully combined. This simple seasoning lets the hummus and fresh toppings remain prominent.
- Heat the extra-virgin olive oil in a nonstick skillet over medium-low heat. Add the eggs and cook, stirring gently, for about 3 to 5 minutes, until softly scrambled and just set; remove them while they still look slightly moist.
- Spread about 2 tablespoons of plain hummus over each warm tortilla. Divide the soft scrambled eggs evenly among the tortillas so every taco has a balanced layer of creamy hummus and egg.
- Top each taco with avocado and pico de gallo or fresh salsa. Finish with crumbled feta and chopped cilantro if desired, then serve immediately while the tortillas and eggs are warm.
Notes
Cook the eggs over medium-low heat and remove them while slightly moist because residual heat will finish cooking them. Warm or briefly toast the tortillas before filling to keep them flexible and help prevent sogginess. Roasted-red-pepper, garlic, or spicy hummus works well, and hot sauce or sliced jalapeƱo adds extra heat.
