How to Cook Sausage in the Oven

Bake uncooked sausage links at 400°F until browned, juicy, and safely cooked through. Add sliced onion and bell pepper to the pan for an easy sheet-pan meal.

  • 1 lb (450 g) Uncooked sausage links, such as Italian, bratwurst, breakfast, chicken, or turkey sausage

  • 1 tsp Olive oil
Optional Sheet-Pan Vegetables
  • 1 medium Bell pepper, sliced
  • 1 medium Onion, sliced
  • 1 tbsp Olive oil for vegetables

Method
 

Step-by-Step
  1. Heat the oven to 400°F (200°C). Line a rimmed baking sheet with foil or parchment, or prepare a lightly oiled baking rack set over the sheet.
  2. Arrange the sausage links in a single layer with space between them. Leave the casings intact and do not pierce the sausages.
  3. Bake for 10–12 minutes, then carefully turn each sausage with tongs. Continue baking until browned and cooked through.
  4. Check the thickest part with an instant-read thermometer. Pork or beef sausage should reach at least 160°F (71°C), and chicken or turkey sausage should reach at least 165°F (74°C).
  5. Remove the sausages from the oven and rest them for 3–5 minutes before serving. This short pause allows the juices to redistribute.

Notes

Larger or very thick sausage links may need about 25–30 minutes. For a sheet-pan meal, toss 1 sliced bell pepper and 1 sliced onion with 1 tbsp olive oil, spread them around the sausages, and bake for about 25–30 minutes, turning the sausages and stirring the vegetables halfway through.
