Step-by-Step
- Heat the oven to 400°F (200°C). Line a rimmed baking sheet with foil or parchment, and place a wire rack on top if available.
- Gently mix the ground beef with Worcestershire sauce, kosher salt, black pepper, garlic powder, and onion powder. Stop mixing as soon as the seasonings are distributed.
- Divide the mixture into four portions of about 4 ounces (113 g) each. Shape each portion into a patty slightly wider than the buns, then press a shallow indentation into the center.
- Place the patties on the wire rack or prepared baking sheet. Bake for about 15–20 minutes, depending on patty thickness and desired doneness.
- Check the center of each burger with an instant-read thermometer and cook ground beef to 160°F (71°C) for food safety. Add cheese during the final 1–2 minutes if desired.
- Remove the burgers from the oven and rest them for 3–5 minutes. Serve on toasted buns with lettuce, tomato, onion, pickles, and your favorite condiments.
Notes
Use 80/20 ground beef for the juiciest texture. Do not overwork the meat, and always check the internal temperature rather than relying only on the clock. A wire rack helps hot air circulate and lets excess fat drain away.
