Hot Reuben Dip

A creamy, cheesy baked dip inspired by the classic Reuben sandwich, made with corned beef, sauerkraut, Swiss cheese, sour cream, and Thousand Island dressing. It is ready in about 35 to 40 minutes and serves 6 to 8 people.

  • 8 ounces Cream cheese, softened
  • 1/2 cup Sour cream
  • 1/2 cup Thousand Island dressing
  • 8 ounces Deli corned beef, finely chopped
  • 1 cup Sauerkraut, thoroughly drained and chopped
  • 1 cup Shredded Swiss cheese
Optional Topping and Garnish
  • 1/2 cup Additional shredded Swiss cheese
  • 1 tablespoon Fresh parsley, chopped

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and lightly grease a small 1 1/2- to 2-quart baking dish.
  2. Beat the softened cream cheese, sour cream, and Thousand Island dressing until smooth and creamy.
  3. Fold in the finely chopped corned beef, well-drained chopped sauerkraut, and 1 cup shredded Swiss cheese.
  4. Spread the mixture evenly in the prepared baking dish and sprinkle the optional 1/2 cup extra Swiss cheese over the top.
  5. Bake uncovered for 20 to 25 minutes, until the dip is hot, bubbling around the edges, and lightly browned on top.
  6. Let the dip rest for 5 minutes, then garnish with optional chopped parsley and serve warm with rye bread, crackers, pumpernickel, or pretzels.

Notes

Squeeze the sauerkraut very well to remove excess liquid. The dip may be assembled several hours ahead, refrigerated, and baked when needed; add approximately 5 to 10 minutes to the baking time if starting cold.
