- Whisk the flour, cocoa powder, sugar, powdered hot-chocolate mix, baking powder, and salt in a microwave-safe mug or small microwave-safe ramekins.
- Add the milk, neutral oil or melted unsalted butter, and vanilla extract. Stir only until the batter is smooth, taking care not to overmix.
- Fold in the semisweet chocolate chips if using. For shots, divide the batter among 3–4 small microwave-safe ramekins or espresso cups, leaving plenty of headroom.
- Microwave one full-size mug on high for about 60–90 seconds. For small portions, begin with 25–35 seconds, then continue with short intervals as needed.
- Stop cooking when the top is set but the center still looks slightly moist. Rest for 1–2 minutes, then add whipped cream, marshmallows, or marshmallow crème and any optional garnishes.
Notes
Slightly undercook the cake because residual heat continues cooking the center. Use a wide mug or shallow ramekin for more even cooking, and never use ordinary glass shot glasses unless they are specifically labeled microwave-safe. If using sweetened hot-chocolate mix, keep the sugar at 2 tablespoons.
