Hot Cheesy Cafe Style Salami Sandwiches

Ingredients
  

Bread and Spread
  • 8 slices Sandwich bread, preferably white, sourdough, or firm café-style bread
  • 4 tablespoons Softened butter
  • 2 tablespoons Mayonnaise
  • 1 tablespoon Tomato ketchup
  • 1 teaspoon Yellow mustard, optional
Filling
  • 16 slices Thinly sliced salami
  • 4 slices Cheddar, provolone, or processed sandwich cheese
  • 1 cup Grated mozzarella
  • 1 small Small onion, thinly sliced
  • 1 small Small tomato, thinly sliced and patted dry
  • 1/2 small Green bell pepper, thinly sliced
Seasoning
  • 1/2 teaspoon Dried oregano
  • 1/4 teaspoon Freshly ground black pepper
  • 1 pinch Chili flakes, optional

Method
 

Step-by-Step
  1. Mix the mayonnaise, ketchup, and optional yellow mustard in a small bowl until smooth.
  2. Butter one side of each bread slice. Spread the mayonnaise mixture over the unbuttered sides.
  3. Layer each sandwich with salami, onion, bell pepper, tomato, one cheese slice, and grated mozzarella. Sprinkle evenly with oregano, black pepper, and optional chili flakes.
  4. Close the sandwiches with the buttered sides facing outward.
  5. Heat a heavy skillet, griddle, or sandwich press over medium-low heat.
  6. Cook the sandwiches in a skillet or griddle for about 3–5 minutes per side, pressing lightly, until the bread is golden and crisp and the cheese has melted. In a sandwich press, cook for approximately 4–6 minutes.
  7. Rest the sandwiches for 1–2 minutes, then cut them in half and serve hot.

Notes

Keep the heat at medium-low so the bread does not brown before the cheese melts. Cover the skillet for 30–60 seconds if needed. Pat the tomato dry and avoid overfilling with wet vegetables to prevent sogginess.
