  • 2 tablespoons Honey
  • 1/4 cup Water
Seasoning
  • 1/2 teaspoon, plus more to taste Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
Garnish
  • 1 tablespoon, optional Fresh parsley, chopped

Method
 

Step-by-Step
  1. Peel the carrots and cut them into evenly sized coins or diagonal pieces about 1/2 inch thick.
  2. Melt the butter in a large skillet over medium heat.
  3. Add the carrots, water, honey, kosher salt, and black pepper. Stir well so the carrots are coated.
  4. Cover the skillet and simmer for 8 to 10 minutes, stirring once or twice, until the carrots are nearly tender.
  5. Remove the lid and continue cooking for 5 to 8 minutes. Stir occasionally as the liquid reduces and forms a shiny glaze.
  6. Taste and adjust the seasoning, then garnish with chopped parsley and serve hot.

Notes

Cut the carrots uniformly so they cook at the same rate. Keep the heat moderate after adding honey to prevent the sugars from scorching. For a thicker glaze, leave the skillet uncovered near the end and let the butter-honey liquid reduce until it coats the carrots.
