- Heat the oven to 400°F. Line a large rimmed baking sheet with parchment paper or lightly oil the pan.
- Peel the sweet potatoes if desired and cut them into evenly sized 1-inch cubes.
- Toss the cubes with olive oil or melted butter, cinnamon, salt, optional black pepper, and optional nutmeg.
- Spread the seasoned potatoes in a single layer with space between the pieces. Roast for 20 minutes.
- Turn the potatoes, drizzle them with honey, and gently toss to coat. Return the pan to the oven for 10 to 15 minutes, until tender inside and browned at the edges.
- Serve hot with a small extra drizzle of honey or a pinch of cinnamon if desired.
Notes
Uniform 1-inch cubes cook at the same rate. Add honey partway through roasting because it can darken or burn when exposed to high heat for the entire cooking time. Store leftovers covered in the refrigerator and reheat in a 400°F oven until hot.
