- Finely grate the cucumber and place it in a clean kitchen towel or several layers of paper towel. Squeeze firmly until as much liquid as possible has been removed.
- Add the Greek yogurt, drained cucumber, lemon juice, olive oil, garlic, chopped dill, and salt to a mixing bowl. Stir until the mixture is evenly combined and creamy.
- Taste the tzatziki and adjust the salt, lemon, or garlic to suit your preference. Cover the bowl and chill for 30 minutes to 1 hour before serving.
- Stir once more before serving, then spoon the sauce into a serving bowl. Finish with a drizzle of olive oil and a sprinkle of fresh dill if desired.
Notes
Drain the cucumber thoroughly so the sauce stays thick. Store covered in the refrigerator and use within 3 to 4 days for the best flavor and texture.
