  • 3 tablespoons Chili powder
  • 1 tablespoon Ground cumin
  • 2 teaspoons Paprika
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 1 teaspoon Dried oregano, preferably Mexican oregano
  • 1 1/2 teaspoons Fine salt
  • 1 teaspoon Freshly ground black pepper
  • 1/2 teaspoon Cayenne pepper
  • 1 teaspoon Crushed red pepper flakes, optional
  • 1 teaspoon Cornstarch, optional
For Taco Meat
  • 1 pound Ground beef, chicken, or turkey
  • 1/2 cup Water

Method
 

Step-by-Step
  1. Add the chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, black pepper, cayenne, red pepper flakes if using, and cornstarch if using to a small bowl or jar. Whisk thoroughly or seal the jar and shake until the color and texture look evenly mixed.
  2. For taco meat, brown 1 pound of ground meat in a skillet over medium-high heat, breaking it into small pieces as it cooks. Drain excess fat if necessary, leaving just enough moisture to help the seasoning cling to the meat.
  3. Stir 2 tablespoons of the taco seasoning into the browned meat, then pour in about 1/2 cup water. Simmer uncovered for 3–5 minutes, stirring occasionally, until the liquid reduces and the meat is coated.

Notes

Store the dry seasoning in an airtight container in a cool, dry cupboard for up to 6 months. Flavor is strongest during the first 3 months. Use smoked paprika for deeper flavor, adjust cayenne to taste, and toast the cumin and chili powder in the skillet for 30–60 seconds before adding meat or liquid, taking care not to burn the spices.
