  • 2 cups Granulated sugar
  • 1 cup Light corn syrup
  • 1/2 cup Water
  • 1 1/2 cups Raw, shelled peanuts
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Baking soda
  • 1 teaspoon Pure vanilla extract
  • 1/2 teaspoon Salt

Method
 

Step-by-Step
  1. Line a rimmed baking sheet with parchment paper or a silicone baking mat. Lightly butter the surface if desired.
  2. Combine sugar, corn syrup, water, and salt in a heavy-bottomed saucepan. Cook over medium heat, stirring until the sugar dissolves, then boil without frequent stirring until the syrup reaches about 250°F (121°C).
  3. Stir in the peanuts and continue cooking, stirring occasionally, until the mixture reaches 295–300°F (146–149°C) and looks golden amber.
  4. Remove the pan from the heat immediately. Quickly stir in the butter, vanilla, and baking soda; the candy will foam noticeably.
  5. Pour the mixture onto the prepared baking sheet and spread it into an even layer about 1/4 inch thick with a lightly buttered spatula.
  6. Cool completely for 30–45 minutes, then break the hard candy into pieces. Store airtight at room temperature.

Notes

Use a reliable candy thermometer, avoid humid weather when possible, and do not overcook the syrup because it can become bitter. If using roasted peanuts, warm them slightly before adding them so the syrup keeps its temperature.
