Homemade Hawaiian Sweet Rolls

Soft, lightly sweet yeast rolls made with pineapple juice, milk, butter, eggs, and all-purpose flour. This recipe yields 15 to 18 tender rolls with a golden, buttery finish.

  • 1 cup Pineapple juice
  • 1/2 cup Whole milk
  • 1/2 cup Granulated sugar
  • 1/2 cup Unsalted butter, melted
  • 2 1/4 teaspoons Active dry yeast
  • 2 large Large eggs, lightly beaten
  • 1 teaspoon Fine salt
  • 5 to 5 1/2 cups All-purpose flour
Optional Finish
  • 1 egg plus 1 tablespoon water Egg beaten with water
  • 1 to 2 tablespoons Melted butter for brushing

Method
 

Step-by-Step
  1. Warm the pineapple juice, milk, sugar, and melted butter together until lukewarm, then stir in the active dry yeast and let it stand for about 5 minutes.
  2. Mix in the lightly beaten eggs and salt, then gradually add about 4 1/2 cups flour. Continue adding flour only until a soft, smooth, slightly tacky dough forms.
  3. Knead the dough for 5 to 8 minutes by mixer or by hand. Place it in a greased bowl, cover, and let it rise for 60 to 90 minutes, or until doubled.
  4. Divide the dough into 15 to 18 equal pieces and shape each into a tight ball. Arrange the balls in a greased 9-by-13-inch baking pan, cover, and let rise for 45 to 60 minutes.
  5. Brush the puffy rolls with egg wash if desired and bake at 350°F (175°C) for 20 to 25 minutes, until golden brown. Brush the hot rolls with melted butter and cool briefly before serving.

Notes

Keep some flour in reserve because absorption varies with the flour brand and humidity. The finished dough should be soft and slightly tacky rather than stiff. For evenly sized rolls, weigh the dough and divide it into equal portions.
