- Heat the oven to 475°F with a pizza stone or inverted baking sheet inside, if available. Preheat the baking surface for at least 30 minutes.
- If using regular hot sauce, stir it together with the melted butter to make Buffalo sauce. Toss the cooked chicken with about 1/4 cup of the sauce and reserve the rest.
- Stretch the room-temperature dough into a 12-inch round on a lightly floured or cornmeal-dusted surface. Transfer it to parchment, a pizza peel, or a lightly oiled pan.
- Brush the edge lightly with olive oil, then spread 2–3 tablespoons Buffalo sauce over the dough while leaving a 1/2-inch border.
- Sprinkle on the mozzarella, distribute the Buffalo-coated chicken evenly, and finish with the blue cheese. Add garlic powder and cayenne if desired.
- Bake for 12–16 minutes, until the crust is browned and crisp and the cheese is melted and bubbling. Rest for 2–3 minutes before garnishing with green onions and ranch.
Notes
Bottled Buffalo sauce can be used directly. For a milder pizza, use 1/4 cup Buffalo sauce and increase the ranch drizzle. Blot very wet chicken or mozzarella to help prevent a soggy crust.
