High-Class Hobo Potatoes

Thinly sliced potatoes, onion, bell pepper, bacon, butter, and seasonings bake together in foil packets before being finished with melted cheddar cheese. This easy recipe makes four hearty servings.

Ingredients
  

Vegetables
  • 2 pounds Potatoes, scrubbed and thinly sliced
  • 1 medium Yellow onion, thinly sliced
  • 1 medium Green bell pepper, sliced
Seasonings and Fat
  • 4 tablespoons Butter, cut into small pieces
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Garlic powder or garlic salt
  • 1/2 teaspoon Paprika
Toppings
  • 4 slices Bacon, cooked and crumbled
  • 1 cup Shredded cheddar cheese

Method
 

Instructions
  1. Heat the oven to 400°F, or preheat a grill to medium heat, approximately 375–400°F. Tear off four large sheets of heavy-duty aluminum foil.
  2. Wash and scrub the potatoes, then slice them approximately 1/8- to 1/4-inch thick. Divide the potatoes, onion, green bell pepper, and cooked crumbled bacon among the four foil sheets.
  3. Season each portion with salt, black pepper, garlic powder or garlic salt, and paprika. Dot each packet with one-fourth of the butter.
  4. Fold each foil sheet into a tightly sealed packet, leaving a little room inside for steam. Place the packets on a sheet pan for oven baking.
  5. Bake for 35–45 minutes, or grill for about 30–40 minutes, turning the packets once during grilling. Carefully open one packet and test the potatoes with a fork.
  6. When the potatoes are tender, sprinkle the shredded cheddar over the portions and loosely reseal the packets. Cook for 3–5 more minutes, until the cheese is melted.
  7. Open the packets cautiously because they release very hot steam. Serve the potatoes immediately while the cheese is soft and the buttered vegetables are hot.
