Hearty Tortellini Soup

A comforting Italian-inspired soup made with sausage, vegetables, tomatoes, broth, cheese tortellini, and greens. It is a satisfying one-pot dinner for 6 servings.

Ingredients
  

Soup Base
  • 1 tablespoon Olive oil
  • 1 pound Mild or hot Italian sausage, casings removed
  • 1 medium Yellow onion, diced
  • 2 medium Carrots, peeled and diced
  • 2 stalks Celery stalks, diced
  • 3 cloves Garlic, minced
  • 6 cups Chicken broth
  • 1 28-ounce can Crushed tomatoes
Seasoning
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon, plus more to taste Kosher salt
  • 1/4 teaspoon Black pepper
  • 1 pinch, optional Red-pepper flakes
Pasta and Greens
  • 1 package, about 9 ounces Refrigerated cheese tortellini
  • 2 cups Baby spinach or chopped kale
For Serving
  • 1/2 cup Grated Parmesan

Step-by-Step
  1. Heat the olive oil in a large Dutch oven or soup pot over medium-high heat. Add the sausage and cook for 5–7 minutes, breaking it into small pieces, until browned; drain excess fat if necessary.
  2. Add the diced onion, carrots, and celery to the browned sausage. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Stir in the minced garlic and cook for 30–60 seconds, just until fragrant. Avoid letting the garlic brown, as it can become bitter.
  4. Pour in the chicken broth and crushed tomatoes. Add the Italian seasoning, kosher salt, black pepper, and optional red-pepper flakes, then bring the soup to a boil.
  5. Reduce the heat and simmer the soup uncovered for 15–20 minutes. This gives the vegetables time to become tender and allows the sausage, tomatoes, and herbs to develop a full flavor.
  6. Stir in the refrigerated tortellini and cook according to the package directions, usually 3–7 minutes. Keep the soup at a gentle simmer and stir carefully so the pasta cooks evenly without breaking.
  7. Add the baby spinach and cook for 1–2 minutes, until wilted. If using chopped kale, simmer it for several additional minutes until tender.
  8. Taste the soup and adjust the seasoning with more salt or pepper if needed. Ladle into bowls and finish each serving with grated Parmesan.

Notes

Add tortellini near the end because it cooks quickly and can become too soft or absorb too much broth. For leftovers, store the tortellini separately when possible, or add extra broth while reheating because the pasta continues absorbing liquid in the refrigerator.
